Lentil Sausage Soup

Ingredients:

2 Tablespoons olive oil 

1 medium onion, finely chopped 

2 medium carrots, finely chopped 

1 celery rib, finely chopped 

1 1/4 cups lentils( I used French Green) 

1 can (15-16 ounces) diced tomatoes 

6 cups chicken broth or stock (or 3 cups water 3 cups chicken stock or broth) 

11/2 teaspoons salt 

1/4 teaspoon black pepper 

8 ounces Turkey smoked kielbasa 

4 tablespoons balsamic vinegar. 

1 Head escarole (optional) 

Directions: 

1. Heat 2 tablespoons of oil in a pot over moderately high heat until hot. Cook onions until golden brown ( about 6 mins ) 

2. Add carrots and celery & cook until softened. ( about 5 mins ) 

3. Add lentils, tomatoes, water, chicken broth, salt, pepper and bring to a boil. Add diced kielbasa, reduce to moderate heat and cook for 30 mins or until lentils are tender. 

4. Half way through (15 mins) add escarole. 

5. Stir in balsamic vinegar & serve !
